The 2009 Chateau Peyfaures is supple and opulent. Ripe red and black currants, violets, rounded out with a kiss of vanilla and baking spice. Delicious now but perhaps even better in ten to twenty years.
Wine Making Method: Natural, native yeast fermentation, vegan.
Varieties: 95% Merlot, 3% Cabernet Franc, 2% Cabernet Sauvignon
Soil: Clays, Ferruginous Limestone Subsoil.
Harvest: Hand harvest plot by plot at optimum ripeness. The grape crop is density sorted and by hand in our cellar.
Maturation: 100% in French oak barrels, one third new for 15 months
