2011 Tasting Notes
A vintage that shows the skill of our winemaker, who managed to bring out a richly textured and charming wine from difficult conditions in the vineyard. Lower yields and careful sorting mean that there’s less of this wine, but what remains is well-crafted and rewarding. Lacey tannins and elevated acid are the backbone to cassis, dried flowers and mushrooms. Like the 2007, this wine is great for earlier drinking, needing just a few years in the cellar to open up and reveal it’s secrets.

Wine Making Method: Natural, native yeast fermentation, vegan.
Varieties: 95% Merlot, 3% Cabernet Franc, 2% Cabernet Sauvignon
Soil: Clays, Ferruginous Limestone Subsoil.
Farming: Organic
Harvest: Hand harvest plot by plot at optimum ripeness. The grape crop is density sorted and by hand in our cellar.
Maturation: 100% in French oak barrels, one third new for 15 months
