2007 Tasting Notes
The cooler weather made this wine particularly fine-grained and delicately aromatics. More red fruited than purple, with rose petal and damp earth. This can age for a few more years, but is also open earlier. This is the vintage to drink while waiting for the 2005 to come around.

Wine Making Method: Natural, native yeast fermentation, vegan.
Varieties: 95% Merlot, 3% Cabernet Franc, 2% Cabernet Sauvignon
Soil: Clays, Ferruginous Limestone Subsoil.
Farming: Organic
Harvest: Hand harvest plot by plot at optimum ripeness. The grape crop is density sorted and by hand in our cellar.
Maturation: 100% in French oak barrels, one third new for 15 months
